You Heart What You Eat: Ready, aim, stir fry

— One thing I've discovered is that the simpler the recipe, the more dumbfounded I am that I hadn't thought of it sooner. In this case, it's stir-fried pea shoots.

Up until recently, I hadn't considered "stir fry" as something I'd make at home but instead pick up in a to-go container or eat at someone-far-more-talented-in the-wok-department's home. Now, I resort to the stir-fry madness if I'm tired of salad or can't think of a dish applicable to a particular vegetable. Into the depths of the stir fry skillet it goes and out comes something so much more delicious than I'd thought possible.

To kick off this particular week, I'd like to thank Mark Berkley from Innovative Ag Colorado for supplying me with a considerable surplus of sweet pea shoots.

After eating salads, sandwiches and snacks with dip, I was running out of ideas and figured a little stir fry couldn't hurt. One cup of pea shoots contains 35 percent vitamin C and 6 percent iron — who knew such a small plant could be such a healthful treasure?

And with that, here's another painless, five-minutes-or-less recipe for your cooking pleasure.

Ready, Aim, Stir Fry (Pea Shoots)

  • 1 tablespoon olive or walnut oil oil

  • 2 cloves minced garlic

  • 1 tablespoon mustard
  • 1 teaspoon honey
  • 
2 cups sweet pea shoots
  • Salt and pepper

In a wok or skillet set to medium heat, sauté garlic in olive oil or your choice of nut oils for one to two minutes.

Add mustard and honey until creamy (about 30 seconds) and add pea shoots until just cooked (two minutes tops), tossing and stirring nonstop.

Remove from heat and sprinkle with salt and pepper to taste, serve and enjoy.
