RECIPE: Bésame’s caipirinha

The Bésame Caipirinha ushers in the taste of Brazil.

STEAMBOAT SPRINGS — Margaritas and daiquiris, step aside — make way for the caipirinha.

Ushering in the taste of Brazil, Steamboat’s newest Latin-inspired eatery, Bésame has a new cocktail with a spicy, yet sweet punch sure to leave a lasting impression.

“I love anything spicy, so I wanted to mix the authentication of Brazil but include those fresh exotic fruits that many Latin-inspired drinks have,” said Brittney Kaleikini, Bésame bartender.

A Brazilian-inspired Caipirinha — a cocktail made with Cachaça, a spirit similar to rum — is one of their new drinks on the cocktail menu that Kaleikini created.

Her version, the Bésame Caipirinha was concocted with her infused chili simple syrup, an addition that contributes a spicy, herbal kick to the daiquiri-like, margarita-like drink. All share the tropical combo of sugar, lime juice and spirit.

In the Caipirinha’s case, half of a lime, cut into wedges, is muddled with simple syrup at the bottom of a rocks glass and then topped with Cachaça and ice. It’s a simple drink, even if it does require a little elbow grease to make.

“We’re really excited to bring this culture and all these flavors to Steamboat because it’s something very different that people maybe haven’t tried before,” Kaleikini said.

 

Bésame Caipirinha

Ingredients

  • 4 quartered lime slices
  • 1 oz. chili infused simple syrup
  • 3/4 oz. guava puree
  • 1 ½ oz. Cachaça
  • Ice

Directions

Start off with your quartered lime slices and muddle those together.

“Depending on how spicy you want it — the longer you muddle it, the spicier it will get because muddling breaks up the spices,” Kaleikini said.

Next, pour the simple syrup, guava puree and Cachaça into a cocktail shaker and shake it all together with ice to ensure the flavors all mix together.

Then take your sugar-rimmed glass and pour. Finish it off with a fresh lime wheel.
