Healthy eating: Spicy roasted sweet potato wedges

Spicy roasted sweet potato wedges

4 to 6 sweet potatoes, small

3 tablespoons honey

2 tablespoons olive oil

Hot pepper flakes

Kosher salt

1/2 cup plain yogurt

1/2 lime

3 green onions, finely chopped

Handful cilantro, chopped

Preheat oven to 375 degrees. Wash and cut sweet potatoes into wedges, leaving on peel. Check for blemishes and remove. Mix the honey and oil. Coat potatoes. Line a cookie sheet with foil, and place wedges on a cookie sheet. Sprinkle with hot pepper flakes and kosher salt. Roast approximately 25 minutes until wedges are caramelized and browned. Mix plain yogurt with fresh lime juice. Drizzle on top of cooked sweet potatoes. Combine chopped green onions and cilantro. Sprinkle on top of the cooked sweet potatoes and serve. Serves four to six.
