A feast for the senses

The atmosphere is “eat, drink and be merry.” At the eighth annual Madness de Vine fund-raiser for Perry-Mansfield Performing Arts School and Camp, guests start the evening with a Gondola ride into one of the biggest cocktail parties of the year.

“The night will be about good food, wine and art,” said Liz Wahl, Steamboat Ski and Resort Corp.’s executive chef. “It will be a celebration of Perry-Mansfield (which just celebrated its 90th anniversary). It’s a feast for your eyes and your mouth.”

Last year’s wine and food tasting, along with auction items, raised $28,000 for scholarships to Perry-Mansfield.

“Perry-Mansfield is one of the foundations of our community that makes it more interesting than just a ski town,” Wahl said.

Wahl prepared the menu after she received a list of wines from Germany, Australia and New Zealand, the Alsace Lorraine region of France, Napa Valley, Italy and several dessert wines.

“This year, I decided to make the menu a collaboration,” Wahl said. “I always have so much fun putting this together, I thought my staff should have fun, too.”

Hazie’s chef Rebecca Pauvert, who went to culinary school in France and whose husband is a multigeneration French chef, paired her menu with the Alsace wines.

“Alsace wines are hearty,” Wahl said. “You don’t want to pair them with delicate food. You want something bold.”

Pauvert will be serving Quiche Lorraine, Alsace cheeses and fruits, and cabbage rolls.

Ski Corp. banquet chef Lawrence Jaconetta prepared the food to accompany the wines from Napa Valley and Italy.

The selection of Napa Valley wines is “incredible,” said Bottleneck owner John Marshall. “I’ve never seen this much fabulous wine offered at an open tasting.”

Madness de Vine promises to be an evening of foody grazing as guests move from table to table, country to country.
