You Heart What You Eat: Strawberries with love

Steamboat Springs — One of my most favorite times of year is berry season. Strawberry season actually. I don't know if it's because I remember always having a strawberry patch in our garden or because my mom had a kitchen themed with it when I was little. But all the same, strawberries just make me immediately recall how much I savored them growing up.
We'd eat them raw, right out of the garden or crushed over shortcake, frozen from the freezer or spread from the jam we'd canned. All the same, strawberries really were my favorite berry. Now, I pass along my childhood love to my own kiddos, who mutually love the small, red-seeded fruit; and whenever I can find a new way to serve it, I snatch it up like my own.
Last summer, I posted my Berry Gazpacho recipe, which has definitely been a favorite dessert up until this one. Blended with a champagne vinegar and often used in my salad dressings, some black pepper — yes, black pepper, and a bit of olive or nut oil over the top — this light, delicious dessert is definitely a must try especially if you have any doubts.
Loaded with vitamin C (118 percent), manganese (28 percent) and fiber (12 percent), these little wonders (a.k.a. strawberries) make you feel a little less guilty when indulging come dessert time.
Go ahead, arm wrestle me for a pint of organic strawberries at the grocery store — if you promise to make this at home, I might just let you win!
Strawberries with Love
- 8 cups fresh, sliced thick strawberries
- 1⁄4 teaspoon freshly ground black pepper
- 5 tablespoons orange muscat champagne vinegar
- Vanilla ice cream
- Olive or nut oil
- 1 1⁄2 tablespoons honey
- Freshly grated lemon zest
In a medium- to large-sized bowl combine strawberries, vinegar, honey and pepper and set aside at room temperature for 30 minutes to an hour before serving.

Place a serving of strawberries in a bowl with a scoop of ice cream and dust lightly with lemon zest and sprinkle with olive or nut oil. Serve and enjoy!
