You Heart What You Eat: Chicken Lickin’ Lime

— Nothing seals the deal for kicking off grilling season like a new marinade to add to the mix. This was the easiest and arguably the most popular dish amongst us pseudo sous-chefs, so I feel like I'd be a hoarder of great recipes if I didn't share it with you. It screamed springtime, with the freshness in the flavors, so no matter if you associate it with an authentic Vietnamese dish, it will certainly perk up your taste buds for this time of year.

Now, most of us don't have access to young lime leaves or banana leaves, so there is definitely a slight alternation to this recipe, but I assure you, it's pretty close to the original. Plus, using aluminum foil makes me think of some possible fine-dining camping dinner adventures on the horizon this summer.

Chicken Lickin' Lime

  • 4 chicken thighs or breasts cut into long pieces
  • 1 teaspoon lime juice

  • 3 cloves of garlic
  • 3 cloves of shallot
  • 1⁄2 teaspoon ground pepper
  • 1 1⁄2 tablespoons sugar
  • 1⁄2 teaspoon salt

  • 2 tablespoons soy sauce
  • 3 to 4 tablespoons olive oil

In a food processor (or pound in a mortar and pestle, if you have them) pound the garlic, shallot and salt. Mix with pepper, sugar, soy sauce, lime leaves and oil.

Marinade chicken with mixture at least 30 minutes (but 1 to 2 hours can be even tastier). Divide marinated chicken into four servings and distribute into aluminum foil and seal into small packets. It might be best to double layer, to prevent leakage and maintain juices.

Grill at medium heat until crispy, about five to seven minutes.

Serve and enjoy.
