The authentic Vietnamese cafe, which has been a Steamboat Springs favorite for several years, brings together the freshest ingredients available to provide guests with authentic, traditional and extremely flavorful Vietnamese and other Asian dishes.
The Nguyen family opened the restaurant, which offers reasonably priced dishes including shrimp spring rolls, Vietnamese crispy egg roll appetizers, spicy beef noodle soups and grilled pork, chicken or beef rice noodle bowls. The restaurant’s new menu features other Asian cuisines such as curry, Thai and Chinese and some of the best sushi and sashimi in Steamboat.
Many locals consider the new edition of sushi to the menu a favorite. From your typical California roll to sashimi and specialties such as their Crouching Tiger roll, Noodles and More provides some of the best sushi in the area. Much of that has to do with their sushi and sashimi chef who has more than 17 years of experience.
Among the new items is pad Thai, which is stir-fried rice noodles sauteed in a mild chili pepper sauce and served with fresh lime, bean sprouts and roasted peanuts. The new menu also includes special Asian salads served with fresh greens, cucumbers, tomatoes, mandarin oranges, a choice of pork, chicken or beef and a sweet oriental sesame dressing.
Following tradition, Nguyen has added a house specialty to the menu that is designed to bring families together. The Saigon Special Dish consists of deep-fried ground shrimp, grilled pork and beef and egg rolls served with a variety of vegetables, rice noodles and Vietnamese dipping sauce. This is a Vietnamese favorite dish. It is traditional Friday night get-together food for family and friends to celebrate life.
In addition to great food, you will also find a fun atmosphere and music when you visit the restaurant. Noodles & More keeps an entire book of music DVDs on a ledge below the bar’s flat-screen TV, but there are two or three that have emerged as favorites: bold-colored discs of pink and blue that came from Vietnam with the restaurant’s owners, stamped with dancing girls and printed with the words, “20 Hit Disco Collection.”
These are the discs Noodles regulars seem to prefer. And since the restaurant’s owners started showing the “20 Hit Disco Collection” in summer 2007, it’s been on the screen for most of the eatery’s busiest nights.
Special occasions – such as a big football game or a presidential debate – can take away the spotlight, but Nguyen said the retro music videos are the most universal crowd-pleaser.
