Healthy Eating: Lemon Chicken Soup

A delicious soup for lemon lovers. Not as good for leftovers, but you won't have leftovers anyway!
5 cups chicken broth
1/2 cup orzo or other small pasta (uncooked)
1/2 cup cooked chicken, finely chopped
1/4 cup fresh lemon juice
1 egg, beaten
Bring the broth to a boil in a saucepan. Stir in the orzo and chicken. Simmer for 11 minutes or until the orzo is tender, stirring occasionally. Stir in the lemon juice. Bring to a boil. Remove from heat. Add the egg gradually, whisking constantly. Ladle into soup bowls and serve immediately. Do not reheat.
