Healthy Eating: Cross-country carrots

An easy carrot side-dish that kids love.

1 lb. carrots

2 cups water

1 teaspoon salt

1 1/2 tablespoon honey

1/2 teaspoon nutmeg

1 tablespoon butter, softened

Salt and pepper to taste

Cut large carrots on the diagonal in 1/2-inch-thick slices or use whole baby carrots. Place in a saucepan with water and salt. Bring to a boil. Cover and simmer about 15 minutes, or until just tender. Drain. Return carrots to pot, add remaining ingredients and heat through. Serves 4 to 6.
