Healthy Eating: Spring Orzo Salad

Orzo is a shape of pasta that looks like a grain of plump rice. It’s a quick cooking, fun addition to any salads or soups.

Salad:

4 cups chicken broth



1 1/2 cups orzo pasta

15 oz. can garbanzo beans, drained and rinsed



1 1/2 red and/or yellow teardrop or grape tomatoes cut in half

3/4 cup chopped red onion

1/2 cup basil, chopped

1/4 cup mint, chopped

Salt and pepper

Cook orzo in broth about 10 minutes. Cool. Toss with remaining ingredients and vinaigrette.

Red Wine Vinaigrette:

1/2 red wine vinegar

1/4 cup lemon juice

2 teaspoons honey

1 1/2 teaspoons salt

3/4 teaspoon black pepper

1 cup olive oil

Put all ingredients except oil in processor and mix. Gradually add olive oil. You also can just whisk all ingredients together. Serve warm or at room temperature.
