Steamboat business owner opens bakery

The Bakery will offer breads, pastries and other baked goods, in addition to lunch and dinner

Steamboat's Doug Matthews recently opened The Bakery.

— A friend of Doug Matthews had a dream about opening a bakery in Steamboat Springs. So Matthews did.

Matthews opened The Bakery, 1117 Lincoln Ave., on Monday. The Bakery, open from 6 a.m. to 6 p.m., will have four to five fresh-baked breads, a variety of pastries and other baked goods daily. Matthews plans to start serving lunch Wednesday and dinner in three weeks.

After his friend’s dream in late September, Matthews said he started thinking about the possibility of opening a bakery.

He’s never owned a bakery but has years of restaurant experience managing establishments that ranged from fine dining to ski area cafeterias before moving to Steamboat 16 years ago. He’s also familiar with owning a business. For the past 13 years, Matthews has owned grass-fed beef producer River Ranches, which he will continue to operate.

After running the numbers, Matthews said he decided to take a chance.

“It wasn’t even my dream,” he joked. “It was somebody else’s dream to open a bakery.”

So far, so good.

Matthews said he’s just trying to keep up while expanding what The Bakery will offer. That includes pumpkin chocolate chip, blueberry and raspberry muffins; baguettes, focaccia, ciabatta, honey wheat, sourdough, challah and rye breads; and croissants, cookies, pies and cakes among other types of pastries and baked goods. He’s already had two birthday cake orders this week.

“If it comes out of the oven, we’ll make it,” he said.

Matthews said Wednesday’s lunch will feature pork green chile and cream of potato leak soup. In addition to a variety of soups, salads and sandwiches, Matthews said he’ll offer River Ranches grass-fed burgers and hot dogs.

When he starts serving dinner, which will expand The Bakery’s hours to 10 p.m., Matthews said it would be “new American cuisine,” appetizers and small-plate entrees at “locals prices.” The Steamboat Springs City Council, acting as the Steamboat Springs Liquor License Authority, approved his liquor license Tuesday.

After leaving The Bakery with a baguette Tuesday afternoon, Steamboat resident Dave DeMalteris took a bite before getting to his car. He said it was really good.

DeMalteris said he missed Bagel Works, which closed in March after occupying the space since March 2007, and was glad a new place opened where he could get carbs.

“Every community should have a good bakery,” he said.

Matthews said he wasn’t concerned about opening a business in the same location a similar venture recently closed.

“It’s a great spot for a bakery,” Matthews said. “It’s right on Lincoln. We have our own parking. It’s on the way home for half the people in town.”
